1 bag Cauliflower Rice (Pre Riced from Trader Joe's, Sprouts or Whole Foods)
1 package of Grass Fed Beef (Cooked separately)
1 container Sweet Potatoes (Pre cut from Trader Joe's for simplicity) or about 1 cups
1 cup Thinly sliced organic Carrots
1 cup chopped Broccolini.
1 crushed Garlic clove
1/2 Can Organic Coconut Milk
1 Tbl Coconut Oil
2 Tbl Coconut Aminos
1 tsp Curry Powder
1/4 tsp Turmeric,
Drizzle of raw honey
1/4 tsp pink sea salt
1/2 tsp fresh grated ginger
Sprinkle of red pepper flakes & cracked black pepper
Heat up your pan to medium, add your beef, cook until slighlty brown, drain and soak up the fat, set aside. In a separate large pan, add your coconut oil and garlic and then your broccolini and carrots first. After they have started to cook for about 5 -7 min on medium, add the sweet potatoes or any other veggies you want. Once the veggies are cooked down, but still not quite done, add your coconut milk and continue to simmer on low. Now add all your seasonings and sauces. Once cooked and flavors are flavoring..... add your cauli rice last. This only takes a few minutes and you don't want it to get mushy!
Once all your veggies are cooked, you can add as much of the beef as you'd like, about 1 - 1/2 cup is best. Give a test and see if it needs anymore coconut aminos or last drizzle of honey, sprinkle of salt.
Top with 1/2 sliced Avocado and maybe even some yogurt! I like Forager Project's Cashew milk yogurt or Fage if you are not dairy free.
